Instant Pot: Pot Roast

Ingredients:

  • 3-4 lb chuck roast

  • 1 tbsp olive oil

  • 1 large onion, chopped

  • 4 cloves garlic, minced

  • 1.5 cups beef broth

  • 1.5 lbs potatoes, peeled and cut into large chunks

  • 4 large carrots, peeled and cut into 2-inch pieces

  • 2 tbsp Worcestershire sauce

  • 1 tsp dried rosemary

  • 1 tsp dried thyme

  • Salt and pepper, to taste

  • 2 tbsp cornstarch (optional, for thickening the gravy)

Instructions:

  1. Season the chuck roast with salt and pepper on both sides.

  2. Turn on the Instant Pot and set it to the "Sauté" mode. Add olive oil and let it heat up for a minute.

  3. Sear the chuck roast on both sides until browned (about 4-5 minutes per side). Remove the roast from the Instant Pot and set aside.

  4. Add the chopped onion and minced garlic to the Instant Pot. Sauté for about 3 minutes until the onion becomes soft and translucent.

  5. Deglaze the pot by adding the beef broth, and use a wooden spoon to scrape off any browned bits from the bottom of the pot. This will prevent a burn warning during pressure cooking.

  6. Stir in the Worcestershire sauce, rosemary, and thyme.

  7. Add the seared chuck roast back into the Instant Pot.

  8. Close the Instant Pot lid and set the valve to "Sealing." Cook on "Manual" or "Pressure Cook" mode on high pressure for 45 minutes.

  9. After the cooking time is up, let the pressure release naturally for 10 minutes. Then, carefully turn the valve to "Venting" to release any remaining pressure.

  10. Remove the roast from the Instant Pot and set it aside. Add the potatoes and carrots to the pot.

  11. Close the Instant Pot lid and set the valve to "Sealing" again. Cook on "Manual" or "Pressure Cook" mode on high pressure for 5 minutes.

  12. When the cooking time is up, carefully do a quick release by turning the valve to "Venting."

  13. Remove the vegetables and set aside with the roast. If you'd like to thicken the gravy, mix 2 tbsp of cornstarch with 2 tbsp of cold water in a small bowl, then stir it into the liquid in the Instant Pot. Set the Instant Pot to "Sauté" and let the gravy simmer for a few minutes until it thickens.

  14. Slice the pot roast, serve with the vegetables, and pour the gravy on top. Enjoy!
